Creamy Chicken and Gnocchi for Cozy Evenings

Rich and velvety, this Creamy Chicken and Gnocchi recipe combines tender chicken bites and pillowy gnocchi in a luscious sauce, making it a comforting dish ideal for cozy family dinners or special gatherings.

Ingredients
  

  • 1 pound chicken breast diced
  • 1 package gnocchi about 16 oz
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups spinach fresh or frozen
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken breast to the skillet; season with salt and pepper.
  3. Cook the chicken until browned and cooked through, about 7-10 minutes; remove and set aside.
  4. In the same skillet, add diced onion and cook until translucent, about 4-5 minutes.
  5. Stir in minced garlic and cook for an additional minute, until fragrant.
  6. Add spinach to the skillet and cook until wilted; about 2-3 minutes.
  7. Pour in the chicken broth and bring to a simmer; let it reduce slightly, about 5 minutes.
  8. Stir in heavy cream and Parmesan cheese until well combined; allow to thicken, about 3-5 minutes.
  9. Add the cooked chicken back to the skillet along with gnocchi; stir to coat well.
  10. Taste and adjust seasoning, adding more salt or pepper if necessary; serve hot.
