Add diced chicken breast to the skillet; season with salt and pepper.
Cook the chicken until browned and cooked through, about 7-10 minutes; remove and set aside.
In the same skillet, add diced onion and cook until translucent, about 4-5 minutes.
Stir in minced garlic and cook for an additional minute, until fragrant.
Add spinach to the skillet and cook until wilted; about 2-3 minutes.
Pour in the chicken broth and bring to a simmer; let it reduce slightly, about 5 minutes.
Stir in heavy cream and Parmesan cheese until well combined; allow to thicken, about 3-5 minutes.
Add the cooked chicken back to the skillet along with gnocchi; stir to coat well.
Taste and adjust seasoning, adding more salt or pepper if necessary; serve hot.
