Ingredients
  

  • 8 oz. pasta fusilli or penne
  • 2 cups cherry tomatoes halved
  • 8 oz. fresh mozzarella diced
  • 1 cup fresh basil leaves torn
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions.
  2. Prepare the dressing by whisking together olive oil and balsamic vinegar.
  3. Combine cooked pasta, cherry tomatoes, mozzarella, and basil in a large bowl.
