Ingredients
  

  • 4 medium zucchinis sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup breadcrumbs optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the zucchini by slicing it into thin rounds.
  3. In a skillet, sauté the diced onion until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  4. In a large bowl, combine sautéed onions, garlic, zucchini slices, sour cream, cheddar cheese, mozzarella cheese, Italian seasoning, salt, and pepper.
  5. Transfer the mixture to a greased 9x13-inch baking dish.
  6. If desired, top with breadcrumbs for added crunch.
  7. Bake for 30-35 minutes or until the casserole is bubbling and the top is golden brown.
  8. Let the casserole sit for 10 minutes before serving.
