These Sweet and Sour Chicken Skewers combine tender, marinated chicken with vibrant bell peppers and a tangy, luscious glaze, making them an irresistible addition to summer barbecues or casual gatherings.

Ingredients
  

  • 1 pound chicken breast cut into 1-inch cubes
  • 1 cup bell peppers cut into 1-inch pieces
  • 1 cup pineapple chunks
  • ¼ cup soy sauce
  • ¼ cup honey
  • ¼ cup rice vinegar
  • 2 tablespoons cornstarch
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Skewers wooden or metal

Method
 

  1. Prepare the marinade by whisking together soy sauce, honey, rice vinegar, and sesame oil.
  2. Add the chicken cubes to the marinade, coating thoroughly. Let it marinate for at least 30 minutes.
  3. While the chicken is marinating, prepare your vegetables and fruit by cutting them into chunks.
  4. Soak wooden skewers in water for 15-30 minutes if using them, to prevent burning.
  5. Thread the marinated chicken, bell peppers, and pineapple onto the skewers, alternating between each ingredient.
  6. Preheat your grill to medium-high heat and lightly oil the grates.
  7. Grill the skewers for 10-15 minutes, turning occasionally until fully cooked and slightly charred.
  8. In the last few minutes of grilling, brush additional marinade over the skewers for extra flavor.
  9. Remove skewers from the grill and let them rest for a few minutes before serving.
  10. Serve warm with rice or your favorite dipping sauce.
