Ingredients
  

  • 4 chicken thighs skin-on and bone-in
  • 1 cup BBQ sauce
  • 2 cups broccoli florets
  • 1 bell pepper sliced
  • 1 red onion sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the chicken by patting it dry and seasoning with salt and pepper.
  3. In a large bowl, combine broccoli, bell pepper, and red onion. Drizzle with olive oil, then season with salt and pepper.
  4. Arrange the chicken on a sheet pan and surround it with the seasoned vegetables.
  5. Brush a generous amount of BBQ sauce over the chicken.
  6. Roast in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven and let it rest for 5 minutes before serving.
